I’m a bloody genius!! lol…
Today, I made some chocolate bites that are so delicious AND there is NO refined sugar, no gluten & no dairy – filled with simply wholefood goodness!!
Once again, I was just making this up as I went along, so didn’t take any photos until the end – next time, I will make sure I do and add them for you!
How did it start?
A random cuppa with a school mum (…thanks Tanya) lead to a discussion about school lunches and all the homemade goodness we have been cooking up in our kitchen. You can check out all our wholesome and healthy favourites here!
Tanya mentioned making her own chocolate! Light Globe moment – I remember using homemade chocolate for one of Ashlee’s favourite wholefood cakes. What if I mix in some nuts?? Maybe some fruit?? Should taste alright yeah??
YASS!!! It tastes DELICIOUS and only took me 5 minutes to make (and about 20 minutes to chill!)
This is what I did:
- Approx 50 grams of Macadamia nuts and 50 grams of Cashews
- Approx 40 grams of Sultanas & Dried Cranberries
- 6 x tbs of Coconut Oil
- 4 tbs of Cacao
- 2 tbs of Honey
I popped the nuts in a bag and bashed them down to big chunks and mixed in the sultanas and cranberries….
In another bowl, I mixed the Coconut oil, honey and cacao…
Then I added the Fruit n’ Nut Mix, mixed it all together and popped it in a square cake tin – lined with an amazing Agreena Baking Sheet! (seriously the best invention EVER, we have not used baking paper since we found them!)
In the fridge it goes till it sets!
Pull it out, cut it up and ENJOY! Let us know how it turns out for you…
*next time, I will add a few more nuts and sultanas – the ‘chocolate’ is a pretty strong and yum flavour, so more bulk and less choc next time.
*We cut it into 24 bite sized morsels of yumminess which worked out to be only 50 cals – WINNING!
It’s CUPPA TIME – I enjoy my cuppa in an insulated stemless tumbler – keeps it hot for hours – which is perfect for me as I always forget it’s there and often leave half drunk cups!
….and when I am in the car or travelling – I also use this Bamboo one!!
