We are always searching for healthy snacks for when we are caravanning and for school lunch boxes.  I have discovered lots of quick, easy & healthy recipes for travel snacks.  However, there are so many that taste like crap or the kids spit out.  So when we find ones that work, we have to share them with everyone! These healthy Coconut Cookies WORK and are so easy, our 6 year old can make them on her own!! (our Healthy Choc LCM Bars are still our favourite!) 

When we started to take out most of the refined sugar in our diets it was a huge wake up call! We had no idea how much ‘hidden’ sugar we were giving our girls.  We live busy lives, so we always chose the convenient snacks – muesli bars, pre packets of biscuits.  I rarely had time to bake! Thankfully I have a wonderful friend Leah who showed me how EASY and quick baking and cooking with real food was – go figure!

Now, we make time on the weekends to prepare the girls lunch box/travel snacks and our cuppa time snacks. This one only took 2 minutes to prepare and 10 minutes in the oven! Who doesn’t have time to eat healthy?

These healthy Coconut Cookies are another spin on a recipe found in our favourite cooking books from Wholefood Simply – we try and test recipes until we get one that we all LOVE! These ones didn’t last very long…

Simply mix:

  • A cup of natural peanut butter – both smooth and crunchy work!
  • 1/2 a cup of honey
  • 1 tsp of Vanilla extract

Then add:

  • 2 cups of Coconut

Get your hands in there and mix it all together until it is combined well then:

  • Roll them into balls and then squash them with a fork or shape them any way you like, keeping them no thinner than about 1.5cm thick – if they are too thin, they will burn.

Bake in a 170 degree oven for about 10 minutes – keeping an eye on them – once they are golden brown, they are ready.  They will come out of the oven squishy, so let them cool and they then enjoy!
