We have been playing around with gluten free, no refined sugars, dairy free recipes for quite a while. Always looking for those ones that actually work, taste amazing and most importantly, that the kids will LOVE. Something for when we travel and for lunch boxes. We have whipped up some that are terrible…and some that are MAGIC! We have created some winning batches that now become regulars in our home…You can find the ones that worked for us here.
I have been looking for a Chocolate Brownie recipe for yonkers, but we have ditched the refined sugars and processed crap and I was ready to give up after trying a few that ended in disaster – too dry, too bland, too dense, too carboardish (is that a word?…yup..it is now…hahaha)
Today – I NAILED IT!
I combined a couple of recipes together to make a wholesome choc brownie slice that was PERFECT. For us, it actually tasted just like a ‘real’ one. The girls squealed with delight!!
Now…I was not sure that it would work, so I didn’t take any photos during the cook (I will next time)…but once it came out of the oven, the smell was amazing and I knew I was on a winner…
This is what you will need:
- 1/2 cup of Almond Meal
- 1.5 tsp of Baking Powder
- Pinch of Salt
- 3/4 cup of cacao
- 1/2 cup of natural smooth peanut butter
- 1/2 cup of raw coconut sugar
- 1/3 cup of honey
- 1/4 cup of olive oil
- 2 eggs
- 1 tsp of Vanilla extract
Mix some of the the dry ingredients – Almond Meal, Baking Powder, Salt
In another bowl – mix together the rest – peanut butter, coconut sugar, honey, olive oil, eggs & vanilla – whisk it all up well.
Add together a combine well.
Pop it in the try and BAKE for 20min (check with a skewer)
