A banana bread with a twist! Once again, we posted a few glimpses of this MAGIC Banana Bread on our Instagram stories & were flooded with messages for the recipe – here it is:

If you have followed along for a while, you will have enjoyed trying all our easy peasy healthy snack recipes that we make when we are travelling and at home. Our Healthy Banana Bread recipe is a real HIT….well, this one isn’t one of those healthy ones! …and also one you might not do on the road as you need a slow cooker – but…This one is MAGIC!

Like many families, we love experimenting & finding cool recipes online and trying different ones. Many that we would not normally try, but during school holidays and on weekends, we have more time on our hands at home to have a crack!

We are at the post office every day posting orders from our SHOP and have become great mates with our post office manager, Amy. She mentioned an amazing banana bread recipe she had tried and suggested we give it a go.

What’s in it?

She simply had to say ONE word and I knew this was going to be delicious – CONDENSED MILK!

Here we go….

You will need:

  • 1 x tin of condensed milk
  • 4 – 5 ripe bananas
  • 2.5 cups of self raising flour

Method:

Blitz or mash the bananas and mix into the flour with the tin of condensed milk!

Add the mixture to loaf tin that has been lined (or you can use a reusable Baking Sheet) – we sprinkled ours with cinnamon!

Pop your slow cooker on HIGH and add 3cm on water to the bottom. Place your loaf tin with Banana Bread mix into the slow cooker and lay a tea towel under the lid to stop the condensation.

Cook for 2 Hours on high…

Now – the texture is kinda weird – it definately feels and tastes like a bread – it was delicious straight out of the oven and the girls enjoyed it cold the next day.

However, I found myself toasting it in the toaster and adding lashings of butter! O….M….G! Sooooo good…
