We love soup in Winter! (Actually, all year round it’s a favourite for me). However, finding a soup that the girls LOVE has been a little bit tricky over the years. Ashlee likes pumpkin soup and Kate likes Chicken & Corn! Arrrhhhhhh….
Last week we thought we would try something different…we picked some veggies & corn, some stock and some BBQ chook and thought we would just make it up….I love a bit of ginger and Ashlee grabbed the soy sauce…we were set!!
This is what we used that was soooooooooo delicious:
- 2 x carrots
- 3 x sticks of celery
- 2 cups of diced pumpkin or sweet potato
- 1 x large brown onion
- 1 x tin of corn
- breast meat off a BBQ chook
- 6 cups of stock – we used vegetable stock
- 1/2 tablespoon of minced ginger
- 2 x tablespoons of soy sauce
Dice all the veggies, drain the corn and pull off the chicken and shred or dice.
Fry off the celery & onion in the soup pot for a few minutes, then add the carrot, pumpkin and stock. Bring to the boil, then let it bubble away for about 30 minutes. Add the chook, corn, ginger and soy sauce, stir and heat through.
We left this one on low on the stove for another 30 minutes while we got ready for dinner and baked some dinner rolls…
OMG. LOVED by the whole family. A meal in itself, filled with goodness and perfect for lunch, dinner or school…PLUS…because it is so easy, it will be great in the caravan too!
